Serves 4-6

Ingredients

Salad

  • 1 bunch kale, rinse leaves and remove from stem
  • 100g goats cheese
  • 1 golden delicious apple
  • 150g Pomlife pomegranate arils

Dressing

  • 6 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp Dijon mustard
  • ½ tsp minced garlic
  • Salt & pepper to season

Method

  1. Roughly chop the kale and place in a salad bowl as the base. Remove the core and finely slice the apple, add to the kale leaves.
  2. To make the dressing, find a clean jar with a lid. Add the olive oil, lemon juice, Dijon mustard, garlic, salt and pepper, shake to combine.
  3. Pour over the desired amount of dressing enough to coat the leaves and toss. Top with crumbled goat’s cheese. For a little sweet and sour crunch add Pomlife pomegranate arils and serve.

Tip: The kale and apple can be prepared ahead of time, top with dressing, goat’s cheese and pomegranate just prior to serving. If you make the salad prior, add a little lemon juice to your apple so it doesn’t brown in the refrigerator.
