Serves 4-6
Ingredients
Salad
- 1 bunch kale, rinse leaves and remove from stem
- 100g goats cheese
- 1 golden delicious apple
- 150g Pomlife pomegranate arils
Dressing
- 6 tbsp olive oil
- 2 tbsp lemon juice
- ½ tsp Dijon mustard
- ½ tsp minced garlic
- Salt & pepper to season
Method
- Roughly chop the kale and place in a salad bowl as the base. Remove the core and finely slice the apple, add to the kale leaves.
- To make the dressing, find a clean jar with a lid. Add the olive oil, lemon juice, Dijon mustard, garlic, salt and pepper, shake to combine.
- Pour over the desired amount of dressing enough to coat the leaves and toss. Top with crumbled goat’s cheese. For a little sweet and sour crunch add Pomlife pomegranate arils and serve.
Tip: The kale and apple can be prepared ahead of time, top with dressing, goat’s cheese and pomegranate just prior to serving. If you make the salad prior, add a little lemon juice to your apple so it doesn’t brown in the refrigerator.
