Pomegranate Energy Balls

Ingredients

2/3 cup Greek Yoghurt

½ cup almond butter (or your preferred but butter)

¼ cup soy milk

¼ cup PomLife Freeze Dried Pomegranate Powder

1 ½ cup PomLife Freeze Dried Pomegranate Arils

1 ¾ cup quick oats

3 tbs desiccated coconut plus extra to coat Energy Balls

¼ tsp salt

Method

  1. Place greek yoghurt, almond butter, soy milk, oats and desiccated coconut into a bowl and mix until well combined
  2. Split mixture in half and place each half into a separate bowl
  3. Mix in PomLife Freeze Dried Pomegranate Powder into one half and PomLife Freeze Dried Pomegranate Arils into the other
  4. With a spoon, scoop out roughly 30g portions of mixture and roll into balls
  5. Gently roll the Pomegranate Powder balls in desiccated coconut
  6. Place in fridge until firm
