Coconut Pomegranate Chia Seed Pudding

Serves 4


1/3 cup chia seeds

1/3 cups rice malt syrup

400g coconut cream

PomLife Freeze-Dried Pomegranate Arils

Fresh raspberries


Mint Leaves (Optional)


  1. Place chia seeds, malt syrup and coconut cream in a bowl.
  2. Stir to mix ingredients well.
  3. Cover and store in the fridge for 3-4 hrs.
  4. Place mixture into serving ramekins or serving glasses.
  5. Top with rasbperries, diced mangoes and PomLife Freeze-Dried Pomegranate Arils to taste.
  6. Garnish with a mint leaves.
